Cultivar: Ascolana (origin - Italy)
Ascolana is picked the first of the five major table olive cultivars grown in California; and is picked for use as green table olives. The flesh is reputed to be delicate and easily bruised, and Spanish style processing to shrivel the fruit. The good news is Ascolana is said to be resistant to cold injury, and to prefer cooler rather than hotter growing environments. Freestone.
Ascolana is also a very large olive, probably the largest good tasting table olive (there are larger olives, a few, but they tend to be very woody). So: resistant to cold injury, prefers cooler growing climes, used for table olives, picked green, picked very early, large high quality fruit, freestone; sounds just like what we are looking for to expand out table olive plantings! In fact, one of our olive tree shipments for the expansion of our groves included more Ascolana trees - we are going to invest some more time and effort with Ascolano...

These two did just fine this winter. On the left is a picture of these two with a well grown example of nursery stock that is one year younger (and thus did not go through the 2008-2009 storms). Note how those storms completely changed the appearance: most all nursery stock may be grown in tree form but olives really want to be bushes. Something to think about, for those of you who want to "control" the shape of olive trees.
